Secondo Movimento is the concluding chapter of La Pastorale, and the final expression of the collaboration between Massimo Bottura and Santo de Piedra. Conceived from the outset as a finite creative dialogue inspired by Beethoven's Pastoral Symphony, the series reaches its natural conclusion with this last movement.

A last gesture, conceived with Massimo Bottura.
Secondo Movimento closes La Pastorale, with a final gesture shaped alongside Chef Massimo Bottura, bringing emotion, memory, and a profound sense of place to its concluding chapter. The recipe calls for an ultra-rare wild Tepeztate agave, harvested by hand in the remote southern mountains of Oaxaca, incorporating juniper wood at two key moments of production, just as it is traditionally used in Modena's acetaia. The result is a poetic tension, a spirit that subtly flirts with the character of a gin while remaining unmistakably mezcal, embodying the spirit of renewal found in Beethoven's Sixth Symphony.
The last 1,500 decanters have rested in Oaxaca, aging patiently in glass, a traditional mezcal practice akin to what crianza means for a fine wine: time as the final ingredient. With this release, the Pastorale Series reaches its end. What remains once allocated will never be produced again.
Techniques borrowed from
Aceto Balsamico
Crafted from Tepeztate, a very rare and wild agave, and incorporating an innovative use of juniper wood during key stages of production, this mezcal is deeply shaped by its unique terroir. The result is a spirit of remarkable depth, unfolding with warm notes of leather and caramel, delicately balanced by a peppery brightness and subtle mineral saltiness. These latter notes are the gift of our land, born from the rare convergence of Pacific and Atlantic winds that shape the soul of our domaine in Oaxaca's southern mountains. To close the circle of this collection, each bottle is packed into a handmade box of treated wood, sealed with natural beeswax and sourced with sustainability in mind.
